Dinner for one

It's been a while since I've been completely on my own for a couple days (if ever?) – no hubby, no kids, not even the dog any more to keep me company. Here's what I made for dinner, which was actually really good – and I have leftovers to take to the office for lunch tomorrow!


Chicken arugula frittataHalf-et frittata

Red onion sauteed in olive oil, then arugula lightly sauteed, then eggs, then bits of leftover roasted chicken plus monterey jack cheese chunks and chopped fresh cilantro – cooked, then broiled, and capers on top. Yumsk!

AND I put everything away that I brought in the door with me today, AND cleaned up the kitchen after cooking! So I'm off to a good start so far… 🙂
