By request, I’m posting my recipe for biscotti, which is sort of a synthesis of several recipes I had found online, but which I found to be the tastiest combination.
- 6 Tbsp unsalted butter
- 3/4 C sugar
- 2 eggs
- 1 tsp vanilla
- 2-1/4 C flour
- 1-1/2 tsp baking powder
- 1/4 tsp salt
- 1-1/2 tsp cinnamon
Cream butter, sugar, eggs & vanilla. Sift together and mix in all the dry ingredients. Mix thoroughly until it forms a ball. Divide in two halves.
Roll or pat out on floured surface to a loaf about 3/4″ thick & about 3″ wide.
Bake at 325 until golden & firm, about 25 minutes – I use a baking stone to get a perfectly golden underside.
Remove loaves to a cutting board and slice into 1/2″ slices.
Place slices cut side down back onto the baking sheet or stone. Bake another 15 minutes. This second baking is what makes it biscotti 🙂
When done, stack to cool before enjoying with a cup of Italian coffee…
